Coconut Flour Chocolate Chip Cookie
Ingredients:

1 cup sifted coconut flour
1/2 cup butter
1 cup light brown sugar
4 eggs
1 teaspoon vanilla
dash salt
1/2 cup GF chocolate chips
1/2 cup GF white chocolate chips
1/4 cup dried cherries

Carefully melt the butter in the microwave. Let it cool a bit.
Sift the coconut flour and brown sugar into your mixer bowl. This step is important!
Add the eggs, vanilla, salt, and butter to the coconut flour and sugar mixture.
Mix on low speed until combined. Flour mixture will look like regular chocolate chip cookie dough.
Add chocolate chips, white chocolate chips, and cherries (to your taste). Blend on low just until combined.
Drop the batter onto a silpat-lined or lightly greased cookie sheet. These cookies do not spread, so shape the cookie as desired.
Bake at 350 degrees until the bottom of the cookie is lightly browned. If you wait until the top of the cookie is browned, the bottom might be burned. (At least it was in my oven). Total cooking time for my oven was about 16 minutes. I would start with 12 minutes and then keep checking until you find the right time for your oven.
Remove cookies from baking sheet and cool on a cookie rack.
This recipe makes about two dozen cookies.
