Mounds of Joy Share We have ALWAYS been a very traditional Family, especially when it comes to food ! This is a MUST have on Christmas Eve or else....I have been told I will get a bag of coal :-( so far, I have NEVER gotten the coal !!! Prep time: 15 minutes |Cook time: 15 minutes |Total time: 30 minutes |Servings: 6•8 ounce(s) of Philadelphia cream cheese
•1 cup(s) of all-purpose white flour
•2 tbsp. of granulated sugar
•1 cup(s) of coconut shredded
•1 cup(s) of almonds - chopped
•2 cup(s) of semi-sweet chocolate chips
•1 tsp. of vanilla
•2 eggs - slightly beaten
•1 cup(s) of ricotta cheese
•4 cup(s) of vegetable oil
•1/2 cup(s) of heavy cream
•Powered sugar
Steps
1.Using a cooking thermometer , heat oil in a deep saucepan to 375*.
2.In a large mixing bowl mix together the flour
3.add the baking powder
4.add the sugar
5.add the coconut
6.add the almonds
7.add the vanilla
8.add the eggs
9.add the ricotta cheese
10.add 4 ounces Philadelphia cream cheese
11.mix all together until its smooth & creamy
12.Carefully add a tablespoon of mixture at a time to hot oil
13.Within a minute balls will form into puffs and turn a golden brown
14.Drain on a paper towel
15.while the Mounds of Joy are draining on paper towels lets get the Chocolate fondue prepped
16.In a double boiler add the semi-sweet chocolate chips
17.add heavy cream
18.add the remaining 4 ounces Philadelphia cream cheese
19.stir until all melted with a shiny, creamy texture
20.on a decorative serving plate place the Mounds of Joy and sprinkle with powdered sugar
21.in a decorative serving bowl or fondue pot put the melted chocolate mixture for dipping the Mounds of Joy !!!!
