Lemon Coconut Cream Bars
These sweet and chewy bars combine the flavors of coconut cream and lemon (two of my favorites!). They are a perfect treat after a long spring day. Prep time: 15 minutes |Cook time: 25 minutes |Total time: 40 minutes |Servings: 10•1 cup(s) of graham cracker crumbs (fine with some larger pieces)
•4 tbsp. of butter melted
•8 ounce(s) of Philadelphia Cream Cheese
•3 eggs
•1/2 capful vanilla
•3/4 cup(s) of sweetened coconut
•3/4 cup(s) of sugar
•2 tsp. of fresh lemon zest
•3 tbsp. of lemon juice
•2 tbsp. of flour
•1 pinch of salt
Steps
1.Make each layer for these three layer bars separately. Layer in 8x8 greased baking dish.
2.Begin with the crust by mixing graham cracker crumbs with melted butter. Mix until moistened and crumbly. Transfer crust mixture to baking dish. Spread evenly and press into edges. Set aside.
3.Beat softened cream cheese with 1 egg and vanilla until soft and fluffy mixture in medium bowl (about 2 min). Fold in ½ cup of coconut until well blended. Spread coconut cream mixture on top of crust creating an even layer.
4.Next, combine remaining ingredients (except ¼ cup coconut) for lemon topping in separate bowl. Mix until well blended. Pour mixture evenly over coconut cream layer so it is completely covered.
5.Bake in preheated oven at 350 for 25-30min until topping is set. Cool completely on wire rack. When baking dish is cool to the touch, transfer to refrigerator for at least an hour to set and cool completely. If you have more time, overnight is great!
6.Top with ¼ cup of coconut before serving.
