Hamtastic Breakfast Cupcakes! Share Tags: entree I just love cupcakes, and i wanted a way to enjoy them even in the morning! So I gathered up my favorite quiche recipe one day. Such a feeling of sadness fell over me when I realized that I did not have all of the cheese called for in the recipe. Lo and Behold I had some Philly cream cheese and made a swap. Results? Fantastic! Or should I say, hamtastic! Now they are out new favorite! Even the guys like these hearty cupcakes! Can't wait to show you how to make them! Prep time: 20 minutes | Cook time: 35 minutes | Total time: 55 minutes | Servings: 10 2 cup(s) of of chopped fresh broccoli
2 cloves finely minced garlic
1/4 tsp. of onion salt
1/4 tsp. of red pepper flakes
1/2 tsp. of dried basil
5 eggs, slightly beaten
1/2 cup(s) of shredded asiago cheese
1/2 cup(s) of shredded cheddar cheese
1/2 cup(s) of softened Philadelphia Cream Cheese
1/2 cup(s) of fresh grated parmesan cheese
1 dash salt and pepper to your taste
20 slices of thinly sliced deli ham
Steps
Preheat oven to 375*F
Place olive oil or cooking spray in the bottom of a small pan and on medium high heat, saute minced garlic, broccoli, onion salt, red pepper flakes, and dried basil.
Let mixture cool, meanwhile combine the beaten eggs with the Philadelphia Cream Cheese, asiago, parmesan, and cheddar cheeses.
Combine with the broccoli mixture. Add salt/pepper if desired.
Spray 2 six-cup big muffin pans with cooking spray.
Place two pieves of deli ham in each cup and make sure that the whole muffin cup is covered.
Add the quiche mixture to the ham filled cups, divide evenly among the ten cups.
Bake for 35 minutes or until light golden brown. Take out of pan by removing with a knife. Make sure that you do not injure yourself!
