Creamy Dreamy Lemon Souffle A tart, light and airy lemon souffle, with a rich lemon custard bottom, this souffle is so easy, so delicious, and so elegant! Each bite serves up an explosion of lemon flavor! Serve warm from the oven, or room temperature, with vanilla ice cream or whipped cream. Enjoy! •3 large eggs, separated
•1/2 cup(s) of sugar
•1/3 cup(s) of lemon juice
•1/4 cup(s) of milk
•4 ounce(s) of Philadelphia Cream Cheese
•1/3 cup(s) of flour
Steps
1.Preheat oven to 350.
2.Butter six 6-ounce custard or souffle dishes, and place them in a 9 x 13 pan (or similar shallow pan).
3.In a medium bowl, beat egg yolks and sugar on high speed, until light and fluffy. Add softened cream cheese and mix until smooth. Add milk, lemon juice, and 1 teaspoon finely chopped lemon zest and mix until incorporated. Fold in the flour and set aside.
4.In a large bowl, beat egg whites until they hold soft peaks. Fold in the lemon batter. Divide into the buttered dishes.
5.Being very careful not to get any water in the souffle dishes, pour boiling hot water into the 9 x 13, until the water reaches halfway up the souffle dishes.
6.Bake about 20-35 minutes, until they are lightly brown. Serve warm or room temperature with sweetened whipped cream or ice cream. Enjoy!
7.OPTIONAL: While the souffles are baking, bring 1/2 cup water and 1/2 cup sugar to boil in a small saucepan. Add zest of two lemons to boiling sugar water and cook for about 5-10 minutes. Remove from sugar water, and set aside to garnish the souffles
