Funnel Cake Recipe

Serve With: Whipped Cream, Strawberries, Powdered Sugar, Boysenberry Jam
Ingredients:
•3 cups all-purpose flour
•2 teaspoons baking powder
•1/2 teaspoon salt
•1/4 cup sugar
•2 cups milk
•3 beaten eggs
•2 cups canola oil
•Powdered sugar, fresh fruit or jam, and whipped cream

Directions:
1.Mix together dry ingredients and whisk in milk and eggs. Place into a pastry bag.
2.Heat 2 cups of canola oil in a 6-inch cast iron pan to 350 to 375 degrees F. Funnel batter in a zig-zag pattern into the oil and cook until browned, about 3 minutes. Turn over and cook another 2 minutes.
3.Remove to a paper towel or wire rack. Dust with powdered sugar, fresh fruit or jam, and lots of whipped cream. Enjoy!
