Sexy Mexy chicken Pot Pie Share Tags: entree A twist on your traditional pot pie, south west flair keeps them asking for this dish over and over!! Prep time: 10 minutes | Cook time: 45 minutes | Total time: 55 minutes | Servings: 6 3 cup(s) of grilled chicken
11 ounce(s) of mexi corn
3/4 cup(s) of black bean
16 ounce(s) of cream cheese divided
1/2 cup(s) of chicken broth
1 tbsp. of chopped jalapeno
2 1/2 cup(s) of all purpose flour
1/2 tsp. of salt
1 egg wash
Combine flour, salt and 8 oz of cream cheese to a moist crumble in a food processor.
Roll into a 6 inch log, wrap in saran wrap and chill.
Combine all chicken, corn, beans, remainder cream cheese, broth and jalapeno over low heat and just melt all things together.
Divide mixture evenly into 6 ramikins
remove log from fridge
slice into 6 equal parts
make a small circle to cover each ramikin, pinch edges to seal.
place 3 slits into top of each pie.
bake for 10 mins at 350
