Sardine bil Foron

Serves 4 - 5

1kg fresh sardines or whitebait
3 onions sliced
6 medium tomatoes chopped
3 tbs olive oil
4 tbs lemon juice
4 tbs white vinegar
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp chilli
Salt & pepper

** Important **

When using fresh vegetables and herbs, make sure they are washed thoroughly and drained.


Place fish in oven-tray and after mixing the remainder of the ingredients together, add to the fish. Bake in hot oven for 30 - 40 minutes, or till fish is cooked. Serve hot or cold. (Tastes even better the next day!)
