Playground Pasta Share Tags: entree Pasta dish essentially in a lovely flavorful creamy tomato sauce loaded with veggies and tuna. All these ingredients work so well together... they "play" well together... watch, enjoy, make it, enjoy! xo Prep time: 25 minutes | Cook time: 30 minutes | Total time: 55 minutes | Servings: 4 1/3 cup(s) of olive oil
1 tbsp. of chopped onion
1 clove chopped garlic
1 cup(s) of chopped squash
1 cup(s) of chopped zucchini
1 cup(s) of chopped eggplant
2 basil leaves
1/4 cup(s) of chicken broth
3 cup(s) of rotini pasta (dry)
3 cans tuna (5-oz. cans)
1 cup(s) of Kraft Whipped Philadelphia Cream Cheese!
1 tsp. of balsamic vinegar
4 tbsp. of grated parmigiano
1/3 tsp. of (ish) crushed red pepper, to taste
1 tsp. of salt, to taste
1 12-oz. package of cherry tomatoes
Steps
Boil a pot of water and dump in tomatoes. Let boil until you see the peels crack. Pour out hot water and replace with cold water. Remove the peels. Set aside.
In a new pot (medium - medium/high heat), pour in olive oil. When hot add onions and garlic to brown. Then add basil leaves.
Add in the tomatoes and press them down into the oil, breaking up the tomatoes.
Add in squash, zucchini and eggplant. Stir.
Add chicken broth, stir and cover. Let simmer for about 20 - 30 minutes, stirring it every couple minutes.
While veggies are simmering, cook your pasta!
Drain pasta. Keep in original pot.
To the veggies, add tuna, whipped cream cheese!, vinegar, salt, red crushed pepper, and parmigiana.
Blend together the veggies, tuna and cream cheese!
Add pasta into this playground, mix again, and voila!
Makes 4 - 6 servings of creamy yumminess.
