Penne with Chicken and Mushrooms

Serves 4

350g pasta (penne)
300g chicken meat cut into cubes
150g mushroom sliced
1 onion chopped
2 cloves of garlic crushed
225g cream
1/ 2 cup white wine
1 tbs fresh basil chopped
50g grated cheese
2 tbs oil
Salt & pepper

** Important **

When using fresh vegetables and herbs, make sure they are washed thoroughly and drained.


Boil the pasta following the instructions on the packet. Heat oil in a saucepan. Add chicken and fry till brown. Remove and keep aside. Put the onions in the same pan and fry till soft. Add garlic and mushrooms, keep frying for 5 more minutes. Put back the chicken pieces and the wine, salt and pepper. Cook for 10 minutes. Add the cream and basil. Drain the pasta and add it to the chicken sauce. Stir then transfer to an oven proof dish. Sprinkle with the grated cheese. Put under hot grill till the cheese melts. Serve with green salad.
