Holey Mole Pie Share Tags: entree This is a crazy cross between a shepherds pie and a mexican mole dish. I grew up eating my moms kickin' good shepherds pie... so that dish brings back comforting memories of home... AND I love mexican food, and mole is one of my favorite dishes. So I went ahead and combined the two! The mole in this recipe tastes authentic, but unlike the authentic sauce it only takes minutes to whip up. Prep time: 15 minutes | Cook time: 25 minutes | Total time: 40 minutes | Servings: 5 3 medium sweet potatoes (peeled and cubed)
1 pound(s) of ground beef
3 tsp. of oil, divided
1 small onion, chopped
1 red bell pepper, chopped
1 tbsp. of chili powder
1 tsp. of chipotle chili, chopped
1/4 tsp. of cinnamon
1 pinch of cloves
1 tbsp. of cocoa powder
1 clove garlic, minced
1 tbsp. of tomato paste
1/2 cup(s) of chicken broth
2 tbsp. of brown sugar
1 tbsp. of peanut butter
1 can black beans, drained
4 ounce(s) of Philadelphia cream cheese
1 egg, whisked
Steps
Preheat oven to 400 degrees. Place the sweet potatoes in a saucepan with a dash of salt and ¾ cup of water. Bring to a simmer and cover. Cook untill the potatoes are fork tender. Mash, and set aside.
Meanwhile in a large skillet brown the beef, and set aside.
In the same large skillet, add oil, onion, red pepper and a dash of salt. Cook untill veggies are soft (about 5 minutes). Clear a space in the center of the skillet and add 1 tsp of oil. Add the chili powder, chipotle, cinnamon, cloves, cocoa powder, garlic, and tomato paste. Cook for about 30 sec. Then add the broth, brown sugar, and peanut butter. Stir. Add in black beans and beef, and stir untill the sauce is mixed thoroughly (taste, and add salt if needed). Spread mixture into a small cassarole or 9x13 baking dish.
Meanwhile, to the mashed sweet potatoes, add the cream cheese and mash untill the cream cheese has melted and thoroughly mixed with the potatoes. Add the egg and mix it into the creamy potatoes. Top the beef mixture with the potato mixture, and smooth it out. Place dish in oven and bake for 20 – 25 minutes.
Take it out of the oven, and dig in! HOLY MOLE its SO good!
