FRESH FRUIT SALSA

We certainly cannot change our age, our gender or our heredity, but it's never too late to reduce the risk factors. To reduce risk factors we must find a program of alternative therapies. Delicious, good for you therapies. I don't want to sacrifice flavor or fun.

Vitamin C, Vitamin E, beta-carotene and selenium. So, the more plant foods you eat the less you are to develop high blood pressure, diabetes, obesity and high triglyceride levels.

Take a journey to the Mediterranean and create a diet that is based less in saturated fats, like red meat and dairy, and more in poly unsaturated fats like olive oil, fruits and vegetables. Give those green leafy vegetables center stage and let that steak take a back seat. Fruits are not just something to go with breakfast cereal. Surround your vegetables, fish and poultry with this delicious fruit salsa. The more you eat the more you WIN!

FRESH FRUIT SALSA

This is a colorful variety of fruits that dance on your palate! There are no wrong ingredients or wrong amounts. Whatever fruits you have on hand and what ever fruits you prefer, the flavors will marry well. This salsa is delicious served with chips or as a topping or side dish to any poultry, fish, meat, eggs and vegetable.

1 cup diced cantaloupe
1 cup diced honeydew
1 cup diced peaches
1 cup diced pineapple
1 cup diced tomato
1cup diced red onion
1 cup diced red bell pepper
1 cup diced tomato
1 tiny diced jalapeno pepper
½ c. chopped mint
¼ c. chopped cilantro
½ t. kosher salt
Juice of 2 limes
1 T. extra virgin olive oil

Mix all of the ingredients together. Taste and adjust seasoning. Serve with chips, crackers, pita or tortillas.
