Chicken Fried Rice

Serves 4

Long grain rice
5 spring onions
2 chillies
4 cloves of gralic
2 chicken breasts thinly choppped
2 tomatoes
2 tbs of fish sauce
1 tsp shrimp paste
1 tsp soya sauce
1 lemon
1 tsp Chinese five spices Soya sauce

** Important **

When using fresh vegetables and herbs, make sure they are washed thoroughly and drained.


Cook rice at least 1 hour before and allow to cool. Leave aside.Then, on high heat in a wok, fry the garlic and then add the chicken - stirring occasionally. Add rice and the remainder of the ingredients and mix well over high heat. Add extra fish sauce, soya sauce and lemon to taste. Serve piping hot with a side of cucumbers.
