Baby's Favorite Cream Cheese Cauliflower
Prep time: 10 minutes |Cook time: 40 minutes |Total time: 50 minutes |Servings: 8•1 head of cauliflower (washed and broken into bite size pieces)
•1 whole white onion, sliced thin (sauce)
•2 cloves whole garlic, peeled
•2 tbsp. of olive oil
•4 ounce(s) of Philadelphia Cream Cheese ( 8 tbsp.)
•1/4 cup(s) of milk
•1/2 cup(s) of sour cream
•1 cup(s) of bread crumbs (topping)
•1/3 cup(s) of Asiago cheese
•1 1/2 cup(s) of cheddar cheese
•2 sage leaves
•2 basil leaves
•1 tsp. of fresh thyme
Steps
1.Heat oven to 400 degrees.
2.Wash and clean one head of cauliflower and break into bite size pieces. Place cauliflower pieces in a steamer and steam for 15 minutes.
3.Slice onion in thin slices and peel garlic cloves. Place onion and garlic in a baking dish and pour olive oil over the top. Bake at 400 degrees for 15 minutes. Turn onion over one time during the baking process.
4.Once the onion mixture is done baking remove from the oven, but leave the oven on at 400 degrees.
5.In a food processor add the baked onion mixture, cream cheese, sage, basil and thyme. Blend until mixed well and onions are broken up.(approx. 45 seconds)
6.In a medium sauce pan on low heat add the cream cheese mixture and milk. Cook until mixture is melted and well blended. Add sour cream and blend well, then remove from heat.
7.Place the caulflower in an 8 x 11 baking dish or similar sized dish with a lid and pour the cream cheese mixture on top.
8.Grate Asiago cheese and mix into bread crumbs, then sprinkle bread crumb mixture over the top.
9.The last layer of this dish is the cheddar cheese, which goes on top of the bread crumb/cheese mixture. Bake in 400 degree oven covered for 10 minutes.
