Casseroled Beets
Ingredients
2 lb. medium-sized beets

2 tbsp sugar, optional

3/4 tsp salt

1/4 tsp paprika

3 tbsp butter

1 tbsp lemon juice or a silver of fresh ginger

1/3 cup water

1 tbsp grated onion, optional

Pare, then slice or chop fine: 2 lb. medium-sized beets.

Grease a 7-inch baking dish. Place the beets in it in layers. Season them with: 2 tablespoons sugar, 3/4 teaspoon salt, 1/4 teaspoon paprika.

Dot them with: 3 tablespoons butter.

Add: 1 tbsp lemon juice or a silver of fresh ginger, 1/3 cup water, 1 tbsp grated onion.

Cover the dish closely and bake the beets for 30 minutes or until tender. Stir twice.
