Walnut Florentine Pasta Salad
Pass the Pasta!
2-2/3 cups cooked brown ricepasta (we used bowtie)
3 tbsp Swanson Walnut Oil
1/3 cup Swanson Organic Walnuts, chopped
1 clove garlic, minced
1 cup fresh spinach, torn in pieces
1 tbsp sea salt
1/3 cup fresh Parmesan cheese, grate
Bring water to a boil, add pasta, and cook according to package directions. When pasta is done, rinse with cold water and drain very well. Place pasta in large mixing bowl, drizzle with walnut oil and toss.
Stir in walnuts, garlic, spinach and salt; then mix well. Cover with plastic wrap or place in a sealed container and refrigerate for several hours or up to one day. When ready to serve, place in a serving bowl, toss well, and adjust seasoning to taste.
Sprinkle grated Parmesan cheese over the top of the salad and garnish with your favorite herbs.
