Strawberry Spinach Salad
Prep: about 5 minutes
Makes about 12 cups or 6 accompaniment servings

1 pound strawberries, hulled and sliced
2 tablespoons plus 1 teaspoon white balsamic vinegar
1 tablespoon olive oil
Salt & Pepper
2 bags (5 go 6 ounces each) baby spinach
3 ounces goat cheese
1/4 cup sliced almonds

In blender, puree 3/4cup strawberries with vinegar, olive oil,1/4 teaspoon salt, and 1/8 teaspoon pepper. Transfer vinaigrette to large serving bowl.
Add spinach and remaining strawberries to bowl and toss to coat with dressing. Crumble goat cheese over top of salad and sprinkle with almonds
Each Serving: About 115 calories, 6 g protein, 7 g carbohydrate, 8 g total fat (3 g saturated), 7 g fiber, 7 mg cholesterol, 215 mg sodium.
